Ingredients
 

  • Old El Paso tortilla boats (come in a pack of 8)
  • Flat tortillas
  • 1 onion diced
  • 1 zucchini grated
  • 1 small sweet potato grated
  • 2 cup of spinach leaves
  • 1 tsp of garlic
  • 500g mince
  • 1 pack of old El Paso taco seasoning (comes in the pack with boats)
  • Grated cheese
  • Sesame oil
  • 1 jar bechamel sauce

Instructions
 

  • Cook diced onion and garlic in a bit of sesame oil
  • Add mince and brown
  • Add taco seasoning
  • Add zucchini, sweet potato and spinach
  • Line slow cooker with baking paper
  • Cut your tortillas around the boats to fit in
  • You'll only need one layer per boat
  • Scoop mince mixture in each boat
  • Put 2 tbs of bechamel sauce into each one
  • Put tortilla cut to shape on top
  • Sprinkle with cheese
  • My slow cooker only fits 4 so I doubled mine so they sat on top of each other
  • Cook on low for 2.5 hrs with tea towel under lid
  • Then I'd you wish pop them in the oven and sprinkle with a bit more cheese
  • ENJOY
