Hidden Vegetable Dinner Cupcakes

Ingredients
 

  • For Mince, Tomato and Vegetable Sauce
  • *1kg mince
  • *2 cans of diced tomatoes
  • *2 140g tins of tomato paste
  • *2 medium onions
  • *4 tablespoons of garlic
  • *5 tablespoons of mixed herbs
  • *5 tablespoons of Worcestershire sauce
  • *1 tablespoon of sugar
  • *1 can of four bean mix
  • * 1 large zucchini
  • * 1/2 a head of broccoli
  • * 1/3 of a cauliflower
  • * 2 carrots
  • * 1 cup of green frozen beans
  • * 2 cups of water
  • For Pies (makes 12)
  • *3 sheets of puff pastry
  • * I Chinese container of The Mince, Tomato& Veg sauce
  • * 2 large potatoes
  • *1/4 of a pumpkin
  • *1/2 sweet potato
  • *1 cup grated cheese

Instructions
 

  • For Mince, Tomato and Vegetable Sauce
  • * cook onions in saucepan
  • * add garlic cook for 2mins
  • *add mince cook to brown
  • *add herbs cook for 1 min
  • * add Worcestershire sauce cook for 2 mins
  • *put in slow cooker
  • * add everything else to slow cooker
  • * then add 2 cups of water
  • * cook for 4-6 hours on low or till vegetables are soft (the smaller you chop the veg the less time you need to softenthem)
  • * then blend with stick blender
  • (This makes heaps of sauce it can be frozen for later and can also be added to pasta)
  • For Pies (makes 12)
  • *chop Sweet potato, potato and pumpkin
  • *put in pot of water on stove
  • *cook
  • * mash (add a bit of butter and milk to mash)
  • *oil muffin tray
  • * cut sheets of pastry into 4s
  • *place the pastry in the muffin tray
  • *put 1 heap tablespoon of Mince, Tomato and Vegetable Sauce into each
  • *put 1 heap tablespoon of mash on top of each
  • *sprinkle grated cheese on top
  • *curl edges of pastry in
  • *place into oven on 200c for about 30mins or until golden brown
