Ingredients

6 medium Potatoes

3 rashes of Bacon

1 cup shredded Cheese

Directions

1Slice to near base of potatoes

2Insert bacon between slices

3Line slow cooker with baking paper

4Place bacon filled potatoes into slow cooker

5Sprinkle cheese all over tops of potato and bacon

6Place a tea towel under lid of slow cooker to absorb moisture

7Cook on high for 2 to 3 hours

8Dish is cooked when potatoes are tender and cheese is melted and crisp.

9No pre cooking of potatoes or bacon is needed nor is grilling afterwards.

10Variations that can be added is

11Feta cheese

12Sun dried tomatoes

13Black or green olives

14Spring onion

15Garlic

16Anything your heart desires and can be served with sour cream or guacamole.

Yummy spuds…. I added a little garlic powder… Next time I think I’ll add onion and more garlic

My 3 very fussy monsters loved it. I added mushrooms and onion to mine and I think next time I will add some garlic and herbs as well, because I found it alittle plan for my liking. However all in all it was easy to put together and cook and the monsters loved it so thatโ€™s a win in my books

Was amazing. My 3 fussy monsters loved it. I added mushrooms and onion to mine. I also think that next time I will add some garlic and cracked black pepper. I will be making it again. It was so easy to put together as well

Yummy recipe, very easy.
Used left over Xmas ham instead of bacon, added 1tbsp dried chives.
These are very tasty & filling too!

The trick to this is the place a wooden spoon each side of the potato so you don’t cut all the way through – the knife stops when it hits the wooden spoon. I then pulled out every 2nd slice of potato so there was a larger gap for the bacon & cheese. And then I just put the spare pieces of potato on the top and cooked it along with the dish.
This is a fantastic side dish and we thoroughly enjoyed it
