Hassleback Potatoes

Ingredients
 

  • 6 medium Potatoes
  • 3 rashes of Bacon
  • 1 cup shredded Cheese

Instructions
 

  • Slice to near base of potatoes
  • Insert bacon between slices
  • Line slow cooker with baking paper
  • Place bacon filled potatoes into slow cooker
  • Sprinkle cheese all over tops of potato and bacon
  • Place a tea towel under lid of slow cooker to absorb moisture
  • Cook on high for 2 to 3 hours
  • Dish is cooked when potatoes are tender and cheese is melted and crisp.
  • No pre cooking of potatoes or bacon is needed nor is grilling afterwards.
  • Variations that can be added is:
    Feta Cheese
    Sun Dried tomatoes
    Black or green olives
    Spring Onion
    Garlic
  • Anything your heart desires and can be served with sour cream or guacamole.
  • Yum yum enjoy……

  1. The trick to this is the place a wooden spoon each side of the potato so you don’t cut all the way through – the knife stops when it hits the wooden spoon. I then pulled out every 2nd slice of potato so there was a larger gap for the bacon & cheese. And then I just put the spare pieces of potato on the top and cooked it along with the dish.
    This is a fantastic side dish and we thoroughly enjoyed it

  2. Yummy recipe, very easy.
    Used left over Xmas ham instead of bacon, added 1tbsp dried chives.
    These are very tasty & filling too!

  3. My 3 monsters loved it. I added some onion and mushrooms to mine, and I think next time I will also add some garlic and cracked black pepper. It was amazing and very easy to make. Will be making this again

  5. My 3 very fussy monsters loved it. I added mushrooms and onion to mine and I think next time I will add some garlic and herbs as well, because I found it alittle plan for my liking. However all in all it was easy to put together and cook and the monsters loved it so that’s a win in my books

    Love this recipe!!! I’ve done it with ham/bacon n mushroom as well and its awesome. This teamed with corn on the cob also done in the sc ( I put both in together) is an awesome combo..

  8. Thank You Pauline for posting this, I searched and couldn’t find it again (Spelt it wrong hahaha..) Absolutely stunning and quite a basic side dish, it went well with my slow cooked Lemon Honey Drumsticks wrapped in Bacon (a variant to your recipe..), Yum, Deffo on the menu again thanks

    absolutely delicious! I put a little dollop of butter on each potatoes and sprinkled garlic granules, salt and pepper on before putting on the grated cheese and it was so good. my daughters bestie is quite a fussy eater, and she said I make the BEST potatoes after eating these, and went back for seconds. I’ll definitely be making these again ?

    Followed thr recipe and I served with sour cream & a sprinkle of chives! DELISH Lovely as a light meal or perfect as a side dish.
