Greek inspired slow cooked lamb leg. So tender it falls off the bone!
10 hrs 10 mins
2-2.5kg leg of lamb (shoulder also suits)
1 x bunch flat leaf parsley
1/2 cup fresh oregano or 3tbsp dried
1/4 cup fresh rosemary or 1&1/2 tbsp dried
6 cloves garlic
1/3 cup olive oil
2 red onions slices
2 lemons sliced
1Blend all herbs, spices and olive oil until a pesto like paste has been formed.
2Line bottom of slow cooker with sliced onions and half of lemon sliced.
3Score lamb leg deeply on both sides. Rub Herb blend all over leg and place in slow cooker on top of lemon and onions slices. Place other half of lemon slices on top of lamb.
4Cook on low for 8-10 hours depending on size of leg. I cooked a 2.3kg leg for 10hrs.
5Strain juices from bottom of cooker for a delicious gravy!
