Garlic Parmesan Chicken & Potatoes

Chicken AND potato in the same pot!

Ingredients
 

  • Chicken breasts halved or chicken thighs (as many as you need, depending on how many you are feeding, for this recipe I used 1 chicken breast per person)
  • Baby potatoes halved (as many as you need, depending on how many you are feeding)
  • Grated Parmesan cheese
  • Chopped fresh garlic cloves or garlic powder
  • Salt & Pepper
  • Olive oil
  • Rosemary or Thyme chopped fresh or dried
  • Oregano chopped fresh or dried
  • Parsley chopped fresh or dried
  • Mixed herbs dried
  • Butter, 2 tablespooons

Instructions
 

  • Spray your SC with spray oil and put your potatoes on the bottom.
  • Drizzle with olive oil, top with grated Parmesan, all herbs, spices & butter and mix through.
  • Sear your seasoned chicken (with salt & pepper) in a fry pan for a couple of minutes each side for colour
  • Place chicken on top of potatoes and top with more grated parmesan, chopped garlic (or dried garlic powder) and parsley
  • Cook on low for around 4-6 hours, depending on your SC.

  1. I made this last night and wasn’t disappointed. Very tasty. I was surprised how much juice there was but was glad once I started eating as it ‘sucked’ it up and I kept going back for more. My 4 and 5 year old loved it too. And as for hubby, of course he went back for seconds!

    I cooked it for 8 hrs on low and the chicken was a bit dry, buy still super yum. Definitely making this again

  3. Mine is cooking now and there is so much liquid on the bottom and I can’t work out why? Is our dinner ruined?

  4. Really delicious and easy to make. The juice was lovely with the chicken. I added a lemon cut in quarters because I love lemons.

  6. Not what I expected – perhaps my herb placement wasn’t the same as the picture.
    Cut chicken breasts in half and they were well and truly cooked by 3hrs on low (could have pulled them out on 2.5hrs I reckon).
    Chicken was basically steamed, and unfortunately dry.
    Potatoes were swimming in the butter, garlic and herb juice, but by crikey they were tasty.
    To be honest, if I made again, would simply make the potatoes!
    Glad I gave it a whirl tho ?

  7. I cooked this yesterday. I parboiled the potatoes first in a little salted water before adding them to my SC. Topped with the Chicken and cooked for 5 hours on low in my 3.5l Crockpot. There was some liquid, but we added Bisto gravy granules to that to give us a sauce. The chicken was tender and juicy. Really enjoyed by all 5 and I will make it again. TX
