Garlic Butter Hassleback Potatoes
Serving: 4
Ingredients
- 4 large washed potatoes
- 5 Tbs salted butter
- 4 heaped tsps. minced garlic
- *see notes*
Instructions
- Take washed potatoes and make slices down into each one all the way along the length of the potato approx. 0.5cm apart – but stop each cut approx. 2/3 of the way through the potato so it doesn’t cut all the way through.
- Sit potatoes, cut side up, in bottom of slow cooker
- Add 1 heaped tsp of garlic on top of each potato and spread over
- Top each one with 1T butter (and one extra T of butter at the end into the slow cooker bowl)
- Cook on low for 4-5hrs or until potatoes are tender, turning gently half way through cooking
- Lift out cooked potatoes gently so they don’t break apart at slices
Notes
- Serve one whole potato person and this recipe can be adjusted to suit however many serves you need

I absolutely love this recipe, made it today for the first time. So delicious it will be my go to side when we have visitors as well. Simple to make, yet it looks like you’ve spent a lot of time on it. Did I mention delicious ???
Please explain … Top each one with 1T butter (and one extra T of butter at the end into the slow cooker bowl) Do you put the one extra T of butter at the end of the bowl or at the end of the 4-5 hours cooking time?
The one extra tablespoon of butter goes into the cooking bowl … at the same time you’ve added the others spoons onto the potato … before cooking.
These were lovely and a hit with all the family. I sprinkled season all salt over them and also finished with 30 min in the oven to brown them. A winner!!!!
Nice topped with diced bacon also
These were amazing. Why did I wait so long to try them. Used small spuds as a side to a steak dinner. Definitely will be making again.
