1 cup mashed cold pumpkin
125g mixed dried peel
125g finely chopped apricots
1tbsp honey or Splenda
1 cup unsweetened orange or apple juice
1tsp bicarbonate soda
4egg whites or 2 whole eggs
250g whole meal flour
1tsp mixed spice
1Combine fruit, orange juice and honey in saucepan. Bring to boil, remove from heat and stir in bicarbonate soda. Cool
2Beat egg White lightly, add pumpkin, beat until smooth add fruit mixture. Stir in flour and spice.
3For a moist cake soak fruit in juice overnight
