Fragrant Lamb Curry

Ingredients
 

  • 6-8 lamb chops
  • 2 onions, finely chopped
  • 2 teaspoons ginger
  • 3 cloves garlic
  • Pinch of coarse salt
  • 1 cinnamon stick
  • 1 bay leave
  • 2 1/4 teaspoons cumin seeds
  • 1 1/2 teaspoons dried coriander
  • 3/4 teaspoon ground turmeric
  • 6 cardamom seeds crushed with a spoon
  • 2 large washed potatoes chopped into large pieces
  • 1 cup chicken stock
  • 3 cups of chopped kale
  • 2 carrots chopped into large pieces
  • 1 jar of tomato passata
  • 1 teaspoon curry powder
  • 1/2 tsp chilli
  • Pepper

Instructions
 

  • Brown lamb chops and set aside (optional)
  • Add spices to preheated slow cooker this is to allow them to heat and become fragrant.
  • Add the rest of the ingredients and cook on low for 6 hours.

Notes

  • This curry is not suppose to be spicy if you like your curries to have more of a kick just add more chilli.
  • You can use spinach instead of kale just add the spinach 10 minutes prior to serving .
  • You can also use chunks of lamb rump roast or lamb shanks instead of chops just cook for 6-8 hours on low.
  • If you find the sauce is a bit oily this can happen especially when using chump chops place a few slices of bread on top repeat this process and it should soak up most of the oil.
  • Passata is a thick tomato puree and can be found in your local supermarket in the same section as bolognaise sauces

  1. Made this for dinner tonight and probably my most favourite curries I’ve made from here. It has really authentic flavours I just substituted the lamb for beef as that’s what I had. Will be making it again for sure

  2. made this for dinner tonight was really good and mild so suited everyone in the family. we halved the recipe except for the tin tomatoes as just 2 adults and child. we used a mix of spinach and silverbeet and turned out well added in last 30 minutes of cooking
