Fijian Beef Curry

Ingredients
 

  • 1kg beef
  • 1onion
  • 4 potatoes cut to chunks
  • 1 tblspn garlic
  • 1 tblspn ginger
  • 1 heaped tbsp homemade Fijian 5 spice (see below to make your own)
  • 2 tspn Garam masala
  • Good spash of soy sauce
  • Juice of a lime
  • Cup of natural yogurt mixed with a tblspn of cornflour
  • Frozen Beans

Fijian 5 spice mix (equal parts, best quality)

  • seeds of cumin
  • brown mustard
  • fenugreek
  • Nigella
  • fennel
  • ground up with a tad of cinnamon

Instructions
 

  • Such a simple, easy and full of flavour dish.
  • Mix all of the ingredients together and marinade over night. This is a must to penetrate the meat with full flavour.
  • Pop all in slow cooker and cook for 6-8hrs on low
  • Serve with basmati rice
