Fast'n'Easy Chicken Soup

Ingredients
 

  • *1-2 kg of chicken wings or drumsticks
  • *1 pkt diced frozen veg
  • * One diced onion
  • *1 40g pkt of dry chicken noodle soup mix
  • *2-3 tablespoons of chicken stock powder (salt reduced if you prefer)

Instructions
 

  • Place chicken and vegetables in slow cooker bowl.
  • Add stock powder and dry soup mix and fill with water to approx 2 inches below top of slow cooker inner bowl.
  • Cook for 8hrs on low - this is a recipe that is great to leave on all day while you work.
  • Before I serve I take the chicken out, remove the bones then return the chicken meat to the pot and stir.
  • It's super easy with the frozen veg etc to assemble in less than five minutes and it tastes divine served with crusty bread rolls!!

  2. I have made something similar but uses cooked bbq chicken. But chicken wings and drumbsticks might be a cheaper way to go.

  7. Just wondering if I could make this using leftover woolworths BBQ chicken? Would it still be worth putting in slow cooker? Have most of a BBQ chicken to use up! Thanks

  8. I made this tonight after a friend suggested it and it was lovely. Served our family with a meal leftover to freeze. One thing I think I should have thought about though it that I have a large slow cooker and I think filling it up according to the directions might have been a little too much water, just dimmed the flavour a bit. Lovely, easy recipe.

  9. Made this last night using drumsticks.
    I usually just chuck a bbq chook, deboned and shredded, in, but the depth of flavour using drumsticks was out of this world!!
    I threw in garlic (about 3tsp minced) to try to eradicate germs, and I also threw in shredded cabbage and some diced potato (because my husband thinks potato is life! lol)
    I added chili flakes to serve (again, to bust the germs)

  14. Just wondering…another reviewer mentioned that for her large slow cooker, the amount of water put in diluted the flavour to a point. I have a 5.5 litre slow cooker – does anyone know if I should put a little less water in the bowl? It looks so delicious, can’t wait to try it.!

  15. Made this for lunch today as the toddler has a double ear infection and won’t eat anything at all!
    I used left over roast chicken from Sunday, peas, corn and carrot along with the salad onion. I did more chicken stock then recommended as I love it and love a strong taste! Will definitely be a regular especially in flu season!

  17. Great recipe. I used 1kg chicken breast and 500g drumsticks. The chicken didn’t dry out and it makes a wonderful thick soup which is mostly chicken so it’s a very filling meal.

  18. Another great soup added to my menu! I didn’t have any frozen veggies, so I used what I had available (celery, carrot, potato – all finely diced). I used chicken drumsticks and the meat was so tender and my house smelt amazing! Best chicken soup recipe I’ve made with lots of flavour!

  19. I made this today – tweaked it by using liquid chicken stock (it was out of date haha) plus 2 stock cubes, there were 2 chillis on the bench that didn’t get used in last nights meal so I threw them in, garlic and a handful of pearl barley. Oh and seasoned with salt and pepper.
    I also used two packets of dry chicken noodle mix as the packets were 30g.

    Then I went away to work all day and 12 hours later was divine. Very happy and will be making it a lot this winter.

    I was doubtful of this recipe as I’ve tried to make so many chicken soups but have never found any I’ve made the greatest taste… until now!! Omg yum! This is honestly so amazing and so EASY! The chicken just fell off the bone so ‘shredding’ the chicken was super easy and effortless. This is going to be a weekly meal for sure! ??

  25. This is the best chicken soup I have ever made! I used chicken thighs instead of drumsticks and shredded them at the end, also added chopped fresh veges( leek,pumpkin,zucchini,potatoes) and a handful of barley. Near the end I threw in some angel hair noodles and fine chopped spinach for colour. Yum! Thanks for this so easy recipe. I am 76 so you can always teach an old dog new tricks!

    I used 1kg of chicken thigh instead of drumsticks and 1kg of veg
    This will definitely become a regular meal in our house, especially with a fussy toddler and a teen with braces

  28. I made this last night exactly following Paulene’s recipe.Talk about easy and delicious! My fussy son gave it a 10/10. I used 2 kgs of drumsticks. Using chicken with bones definitely gives it a richer flavour. So economical too. The whole dish cost about $10 and makes heaps. Will be making this again. Winner, winner chicken dinner ?

    My husband and I love this soup. It is so tasty and very easy to make. I cook it as per recipe, I always use drumsticks and remove the skin before cooking. It is a regular winter soup for us.

  41. I LOVE this soup!! Thank you for such an easy, tasty, fail-safe recipe. I use boneless chicken (whatever I have defrosted) … usually 500g of chicken thigh, and 500g tenderloins.

  42. Made this today and it is perfect. Simple recipe and tastes amazing. I used boneless thigh pieces (approx 1kg) and the meat was so tender and basically shredded itself.
    Will keep this soup on rotation over the winter months and experiment with various vegetables.

    This is a staple of mine every winter, it is so easy and real comfort food. I’d never make the lamb shank ones mum used to make as they were so fiddley but this is perfect. Easy no fuss ingredients, can’t say enough of how much I enjoy this!

    Absolutely delicious!
    I ended up using 1.2kg drumsticks, 500g frozen vegies, fresh beans and two onions.
    I also ended up cooking on high for 4.5hours.
    Chicken FELL off the bone!
    I will definitely be doing this recipe again, everyone loved it!

  47. This the best soup. Quick and easy to prepare, makes heaps, so lots to freeze for later. I use drumsticks.

    I make this with a whole chicken. Put it on before I leave for work with either a bag of peas, corn and carrots or fresh/tinned ones depending on what I have. Cook 10 or so hours. It will be ready before this. It’s one recipe I can put on and forget. Come home and minimal effort and the rest is done.
    Come home and take chicken out and shred it (honestly it takes minutes because it falls off the bone) add pasta (I use rissoni) and put on high for 30 mins or so. If you have a sear cooker putting it at 120 works too
    We serve with crusty fresh bread.
    Season if needed as you serve but it really needs nothing.
    You can use any chicken for this but anything on a bone is best.

    My soup hating husband and kids even loved this recipe. So pleased as it was so quick to pop on before I went to work and the smell was amazing to walk into. Ten minutes to de bone the chicken and dinner was sorted with some delicious crusty bread. Will definitely be making again. Thank you Pauline ??

    Legit a weekly staple now. Absolutely divine; not a heavy soup either….living in Darwin so it’s always hot but make this all the time since I’ve discovered it. Also made in the baby 1.5L slow cooker and adjusted recipe to fit but suggest no more than 2 drumsticks otherwise it’s too meaty
