Easy taco stew
Super yummy and easy. Could grate veggies to hide from fussy kids lol.
I served mine in mini taco boats with grated cheese and sour cream.
Serving: 8
Ingredients
- 500gms beef mince
- 1 onion
- 1 tablespoon minced garlic
- 1 red capsicum
- 1 green capsicum
- 1 yellow capsicum
- 2 medium carrots
- 1 can corn kernels drained
- 1 can Mexican beans
- I can diced tomatoes
- 2 pkts salt reduced taco seasoning
- 1 jar taco sauce or enchilada sauce
Instructions
- Brown mince with onion and garlic.
- Place in slow cooker.
- Dice capsicums and carrots.
- Add to meat.
- Add contents of cans to slow cooker.
- Add seasoning and sauce to slow cooker.
- Stir well.
- Cook on low 4-6 hours

- I served mine in mini taco boats with grated cheese and sour cream but will try the leftovers with a baked potato and possibly Doritos
