EASY CHUNKY CURRY BEEF & VEGIE CASSEROLE

Suitable for the whole family. Not too spicy but does have a little bit of a bite so if your kids will be eating this I would reduce curry powder to 1 tsp

Ingredients
 

  • 500g diced beef (depending on how many you're feeding)
  • 2 cups beef stock
  • 1 beef stock cube
  • 1-2 teaspoons Italian herbs
  • 1-2 teaspoons curry powder (depending on how hot you like it, I use Keens)
  • 1 onion, roughly diced
  • Vegetables of your choice, diced (I did potatoes, carrots, and in the last hr I add a half pack of frozen peas and sweet potato)
  • Salt and pepper to taste

Instructions
 

  • Combine all ingredients into the slow cooker
  • Cook for 6-7 hrs on LOW
  • Cooking time may vary depending on your slow cooker
  • In the last hour add peas and sweet potato to preserve their consistency
  • Serve and enjoy

Notes

  • You may need to thicken it at the end with 2 tbsps of cornflour mixed with 1/4 cup of water, then add this mix to the casserole, stir and let sit for 15-20 mins with lid off, until desired thickness is achieved

    Oh, my goodness. This was so yummy. I had double the meat, so I doubled the stock, stock cube, curry powder, and herbs. The vegetables I added were 1 diced zucchini , a 200 gram punnet of diced mushrooms , 2 diced onions , 2 diced parsnips , 2 diced carrots, 1 diced swede, 3 stalks of diced celery, and 1 diced sweet potato. I added frozen beans and peas and corn an hour before the end of cooking time. At the end, it was quite watery, so I just kept mixing in cornflour mixed with water until it thickened. I served it with mashed potato, and boy was it so tasty. The meat was so tender and yum. Definitely making this again. There were plenty of leftovers that I might even make pies out of.

  3. Such a simple and tasty recipe. I had everything in stock already and doubled the recipe adding a little gravy mix to thicken at the end. Got 8 generous adult serves over 2 meals. Will certainly make this again.

  4. This was such an easy dish to make, and was a delight to eat.
    I added sliced up mushrooms, and the only veggies I added was a pack of frozen corn, peas and capsicum. Tasted great on top of mashed potato, but went to another level with tonight’s trail of loaded fries!!
    My own homemade loaded fries! Curried beef and mushrooms from a slow cooker, shoestring fries in the air fryer and grated cheese all thrown in the oven for 3 mins so the cheese melts.

    Did anyone brown the meat in a pan first or straight in slow cooker.
    I will come back to rate it later

  6. Have made this for the second time in the last week today. It is so yummy! Instead of diced potato through it, served it with mash potato on the side. Now I’m thinking would make a nice pie filling

    l loved it ,very filling & easy to put together, daughter said l spoilt it with vegs (she’s a teenager,she doesn’t like much that l do ..haha) just next time will put it on earlier as didn’t eat till late but that’s my bad wasn’t organised !!
