Creamy pumpkin, potato and bacon soup

A hearty slow cooked soup!

Ingredients
 

  • 4-5 potatoes peeled and chopped
  • Half of a jap pumpkin
  • 2xcups diced bacon
  • 1x onion diced
  • 1L chicken stock
  • Salt and pepper to taste
  • Half a tub of thickened cream

Instructions
 

  • Add all ingredients to slow cooker except cream.
  • Cook on high for 3-4 hours or until pumpkin is soft.
  • Use handheld blender to puree or place batches in blender and blend until smooth return to slow cooker and stir through cream.
  • Serve with crusty bread

  1. I made this soup this afternoon. I used a butternut pumpkin and I added 1 carrot, some garlic and a sweet potato. I blended it with a stick blender. I didn’t add cream ( as I didn’t have any in the fridge) It was a bit on the smoky side for me, I think because of the bacon, but it might be better if I add some cream. 🙂 Thank you for the recipe.
