Creamy potato leek and bacon soup

Creamy and delicious ! A perfect soup to warm your tummy on those cold winter nights

Ingredients
 

  • 1 brown onion, halved, chopped
  • 3 tsp garlic
  • 1tbs butter
  • 6-8 medium peeled potatoes cut into chunks
  • 1/4 of a cauliflower chopped into florets
  • 1 leek, pale section only sliced
  • 4x rashers of bacon rind removed and diced
  • 4 cups chicken stock (add more of needed)
  • 400ml thickened cream
  • 1 tsp parsley
  • 1tsp thyme
  • 2x bay leaves
  • Salt and pepper

Instructions
 

  • Pop all into a slow cooker (apart from cream) cook on low for 6 hours or until potato is tender. Remove bay leaves and then add the cream and blend until smooth.
  • Serve with a sprinkle of parmesan and some crusty bread

    Soooo good!!! Even the 1 year old devoured it! Think this will be a staple throughout winter!!! YUM!!!

  2. Should the cream be added when the potatoes are soft and leave it to continue to cook or should cream be added at the end before cooking is finished?

    Having a cauliflower hater in the house (the biggest baby of them all; MY HUSBAND…
    ???), I used broccoli, instead.

    I also
    doubled the potatoes tripled the chicken stock,
    and
    added an onion.
    Ad well as frying the bacon.
    It filled my Spotlight square sear ‘n cook, and tonight we’ll finish the last of it…

  6. I doubled this recipe and cooked it for my work’s weekly Soup luncheon and people are still talking about it weeks later!

    I used fresh herbs (guessed the amounts) and used maybe half the cream. I also fried the bacon pieces for a few minutes in my slow cooker before adding all the other ingredients and it was absolutely delicious. 10/10, can’t wait to cook it again.

  7. This recipe is absolutely delicious. I make this at least once a week in winter and it came in very handy when we were all down with COVID!
