Creamy Pork and Cider

A creamy pork and cider stew with the added crunch of crackle

Ingredients
 

  • 1-1.5kg Pork (if using a large piece cut into 4 or 5 pieces)
  • 1 Leek, thickly sliced
  • 150mls Cream
  • 200mls Chicken Stock
  • 240mls Apple Cider (see notes)
  • 2 tblspns Cornflour
  • 100g Green Beans
  • Pork Rind

Note

  • You can substitute 150mls Apple Juice and 90mls Apple Cider Vinegar for the Apple Cider
  • I buy an extra piece of pork rind from my butcher or some supermarkets sell it separately

Instructions
 

  • Place pork in slow cooker bowl with leek
  • Combine cream and cornflour in a jug, add stock and pour over pork
  • Rinse the cream mix from jug with the cider, pour into slow cooker bowl
  • Cook on low for 5-6hrs (Contempo 5.5L sc)
  • Add beans with about 1hr remaining
  • Cook pork rind in oven at 200°c for 15-20mins until golden
  • Serve with mashed potatoes or pasta and crackle

  1. This was a hit tonight at our place! We had 2 other families join us. I doubled the recipe and it was on from 8am to 6.30pm. Lovely!
