Creamy Mexican Chicken

A slow cooked creamy Mexican shredded chicken recipe the whole family can enjoy!

Ingredients
 

  • 5 chicken maryland pieces (1 - 1.5kg chicken pieces with bone and skin on)
  • 1 x 250g block of philadelphia cream cheese
  • 1 x 35g pkt of taco seasoning mix
  • 150ml cooking cream
  • (cornflour to thicken)

Instructions
 

  • Place chicken pieces in the slow cooker
  • Cube Philadelphia cream cheese and toss cubes over chicken
  • Sprinkle taco seasoning mix over the top
  • Cook on low for 4hrs
  • Carefully lift out chicken pieces, debone them and set aside the chicken meat
  • Give the sauce a REALLY good whisk while the chicken is out to break down the remaining cream cheese lumps and combine the sauce nicely
  • Add a good tblsp of cornflour mixed in 150ml of cooking cream to this sauce and whisk again.
  • Return the chicken to this sauce and stir to combine
  • Allow to cook on low for a further 30mins then serve
  • I served mine with steamed broccoli, while other family members enjoyed theirs with rice

  1. Excellent recipe. I used 1kg of chicken thigh fillets and all my family loved it. I did the whisking trick with the cornflour and it made it thicker almost instantly. My daughter said it tastes like nachos with sour cream. I’ll definitely be making it again for my family to enjoy. Thank you.

  5. Loved this! Was licking the spoon every time I checked on it! Was so good! Definitely going to be a favourite! Used 600ml of cream, and 2 packs of cream cheese as I like mines with a lot of sauce. Also used a hot fajita mix to make it spicer.

  6. I made 2kg (12 skin on legs) 2 tubs of supermarket own (I had woolies) light cream cheese and 2 ply of taco seasoning. Spooned out the cream cheese in blobs sprinkled taco powder over and left on low for 8 hrs. Stirring a few time. I had the cream but didn’t need it. I didn’t remove the chicken and whisk it. Work perfect. Definitely will do again. Served with tmsteam verges and rice. Yum you.. Thanks for the recipe.

  14. Magnificent again..I used boneless skinless chicken thighs and added some home grown red onions and chillis. I also doubled the taco seasoning, then added frozen vegies in the last 90 minutes….beautiful meal and lots of leftovers for work lunches…..so tasty

  16. Omg! Yum! Successful meal. I used about a kg of chicken thighs without the bone but followed the rest of the recipe served with steamed broccolini with a little drizzle of oil and a pinch of salt and Refried beans omg!! YUM! 6 year old and 2 year old loved!!!!

    This is a go-to recipe that we all love, has a lovely creamy taste. I like it also as it is versitile, can be used as a dish on its own with vege etc, but i have also made yummy parcels with it, and i think it could be made into super nachos.. Yet to so that, but i think it would be great!

  26. I read all the reviews on this recipe and was excited to try it. Still I was apprehensive… Would it really pass the fussy kid test? What about the hubby who typically doesn’t like the taco seasoning taste? I halved the recipe for my families needs and it cooked quicker than the recipe suggests (by about 1.5 hours). I left it on keep warm until dinner time and added a bit more cooking cream just before serving as I wanted it quite saucy to serve with white rice and vegetables. My son looked at it and said “Yuck” (typical response when presented with something new) but after tasting it scoffed a whole plate of it in record time. My daughter went back for seconds. And my husband was disappointed that I’d halved the recipe as there wasn’t enough leftover for HIS second helping. So all in all I’d highly recommend. It’s as simple, delicious and addictive as everyone suggests.

    I read the reviews and was very excited to try this. My husband was sold at taco seasoning. We doubled the recipe and changed the chicken to chicken breast and had it on burritos it was delicious! We had leftovers the next day with rice. It is a versatile meal. All my kids loved it.

  29. Love this dish! So versatile- we prefer chicken breast so used that. Used ours tonight as enchilada filling, topped with salsa and cheese. Also added finely diced tomatoes to the mix when I shredded the chicken. Couldn’t stop licking the spoon.

  30. Fabulous recipe….a make again recipe! I did add in some chopped onions and a jar of salsa instead of cooking cream, so it didn’t really need to be thickened after the chicken was thickened. Thank you for sharing!

This was absolutely delicious ? the only things I did different was that I used chicken breast (whole), mixed the taco seasoning mix with the cream (added at the start)’then poured that over the breast n cubed the philly cheese n placing on top as recipe states, broke the chicken up once cooked rather than shredding coz I didn’t want it to soak up all the sauce, turned out amazing, thanx Paulene ? will definitely make this again ???

  35. Made this a couple of weeks ago with chicken thighs and, the whole family loved it. It has a fab flavor without being over the top. Tween aged child went back for seconds and asked for leftovers to be put in their school lunch the next day. Have made it since and will certainly make it again. The second time I added extra cream as we like having some extra sauce.

  37. Ahhmazing!! I served it with wild rice and also had broccoli on the side. Very creamy but not too rich. I used boneless chicken thighs and it turned out well. We all went back for seconds.

  38. Was amazing only I used thigh fillets as I was being lazy and used 300ml of cream one not to waste the rest of the bottle and two i cooked this and had it with fettuccine pasta so wanted the extra sauce. All 4 of us ate it and have sent the recipe to family and friends. It’s a must try.

    I only used 4 Chicken Marylands which equaled the 1.K (ours must be giant chooks here in SA). I must also add that the taco packets I had were only 30gr…I just used the one packet but next time I will put in a jar of hot salsa as we like a bit more oomph….

    I made this for the first time last night and it was absolutely delicious and the house smelt devine. I served it in dinner rolls with cheese for the children and on a plate with a Greek salad for the adults. My fussy son who is a very small eater ended up have 3 rolls. Everyone loved it.   48. Made this for the first time tonight- was delicious! And enjoyed by my three toddlers too. I made using 800g of chicken, 1 tub of cream cheese, 100ml of cooking cream, added a diced onion and 3 cloves of crushed garlic too. It was just the right consistency and was enough to feed a family of 5. I served it on tortillas with salad- perfect taco mixture. Next time, I look forward to trying a dairy reduced version with some lactose free cream cheese and coconut cream in lieu of the cooking cream, for our lactose sensitive family. Will also try with some corn taco shells. This will become a family favourite.

    I made this the other night only used 3 marylands served with steamed green veg WOW. Kids loved it.
    I used the left over chicken to make quesadillas, kids loved then too.

  50. Love it! I used 1.3kg chicken breast, 2 x taco seasoning sachets, 250g philly cheese and 300ml cream. The mix is so versatile which I loved – we enjoyed it as the filling for enchiladas, had it under nachos and on its own with roast veggies. I will use less cream next time just to thicken the mix ever so slightly and may try adding onion, garlic and some red & black beans.

  56. Oh dear – wasn’t a huge fan of this. It was nice but not fantastic. Way to creamy for my family. The philly cheese tasted like sour cream. I followed the recipe but added cooked garlic and onion. I also used diced chicken breast and shredded etc. but didn’t need to add cornflour as the shredded chicken helped thicken. It cooked great etc. in the 4.5hrs but the taste was too claggy. I served with rice but if I was to make next time I would definitely serve with green veges to help lighten the taste a bit. PS. We love mexican so maybe we should have used this as a filling for Quesadillas – now that would have been delicious served with salad. Hmmmm next time………

  61. If using chicken breasts, do you put them in whole to cook? When removed do you then shred and put back in sc for the last 30 mins. Sorry I’m a newbie to the world of slow cooking.

  64. Absolute staple in our house. We have this at least once a week and always have enough left over for leftovers. Usually have it as a meal with plain rice and veggies but also on tortillas mixed with kidney beans. All of my family love this including a fussy 17 year old and a not so keen on meat 9 year old. Found it really easy to make and I always use chicken breasts, 1kg. The rest of the ingredients I use the same. I did find though that the actual Philadelphia brand of cream cheese was too strong (according to hubby) but when I used the Woolworths brand cream cheese it was ok. Overall we love this easy family meal!

    This is a great recipe. I use chicken breast and reduced fat cream cheese and cream. I also add red capsicum, then baby spinach just before serving. With these adaptations it is 5 SP on Weight watchers blue program

  74. Thank you, this dish was so delicious and creamy! I cooked 2 whole breasts for 2.5 hours total and then shredded. Added 300ml cream so we had lots of sauce and no need for flour.

  90. This might be the first Slow Cooker Central recipe I haven’t loved. My son really liked it and went for seconds, and my husband thought it was ok once he’d splashed hot sauce on it, but I just found it bland and too creamy for my palate. I know I could play around with different taco seasonings, but I think creamy sauces are just not my thing. Clearly a matter of personal taste, as there are over 100 reviews written by people who loved it!

    Have made it without the cream cheese (forgot to put it on shopping list) and tasted pretty good.
    Have cut up and fried off some chorizo and/or bacon pieces (around 150-200g) and added at the beginning.

    I love this recipe and so does my family ? I use approximately 8 to 10 chicken thigh fillets and packet of both taco seasoning and Philadelphia cream cheese and double the cream, as everyone wants leftovers. I find that just being able to throw in the chicken, cream cheese and seasoning and set the slow cooker and go so very convenient. I have also frozen leftovers with success, I just add some soft cream cheese and a packet of seasoning to eliminate the watering down from the freezing process. I have given this recipe to others to try and they all agree what a easy and tasty meal this is.

  96. This is honest to god one of my all time favourite meals, I ate it so much over lockdown and now being back in the office kills me to not get to use the slow cooker as much but when I do it’s this meal. I’ve even waited until 9.30-10pm to eat at night just to cook it after work.
    Generally serve with basmati rice, and add in some semi-cooked broccoli for the last 30 mins to make myself feel like it’s ‘healthy’.

  98. I made this for the 1st time a few weeks ago, I need recipes without tomato as my daughter is allergic to tomato & found this recipe.
    I made it with marylands as I picked some up at a reduced price. & used a block of Lactose free Philly. The 3 of us loved it BUT there was so much left over sauce & I decided to use it up the next night my making a potato bake with it. I didn’t add anything extra but some parmesan cheese would be nice. Definitely try the potato bake with left over sauce, you’ll wonder why you didn’t think of it!

  102. Read the odd comment that it was a little bland, heaps of left over sauce and a bit too creamy. I myself wasn’t convinced that 1 pkt of taco seasoning would be enough for 1kg+ of chicken as 1 pkt a typically for 500g of meat. Plus then you are adding cream cheese etc that would dumb down the flavour.
    So I winged it and did 3/4 block of cream cheese instead of a full block and 2 pkts of taco seasoning. I used nothing extra to thicken it and only mixed in 2 large dollops of thickened cream in the last 10 mins.
    Was lovely, we had it with rice and the whole family enjoyed it. Perfect amount of sauce, perfect amount of creaminess and flavour was good. I recommend those who had those comments to try making these changes ?

    I added 1kg thigh fillets
    2 packets of taco mix
    3/4 block of the phili cheese
    I didn’t need the cornflour

    I served with rice and corn chips, everyone LOVED it. Next time I’m going to add some sliced red capsicum, I think it’s going to make it even more delicious.

After reading some reviews I ended up slicing up one red capsicum and one red onion and placing 3 large chicken breasts and 2 taco seasoning mixes on top with the Philly cheese. I also mixed through 300ml of thickened cream at the end with some cornflour. Served it as tacos last night and Nachos today, and am going to turn it into a cob dip next time!! Absolutely loved it ??

  107. Yum was pretty good. Hubby was happy said it was very yummy. I used chicken breast fillets and also used an extra half pkt taco seasoning. Was worried as after the 4 hours most of the cheese was still on top of the chicken with the taco mix but all good once I took out chicken out to shred and to add cream and thicken all was fine. I had not made it before so didn’t know what to expect. Served with rice and greens . Will deff cook again very very yummy .

  112. I tried this recently, using chicken mince, due to stock shortages locally.
    I used 2xpkts taco seasoning, a red capsicum, salad onion & minced garlic. Added a small bottle of cream in last 30ish mins, mixed through & served on rice, did not need cornflour, was thick & creamy. Was wonderful, will def be doing again

  113. Made this last night. I added diced onion and a red capsicum, 2 x packets of taco mix and a full tub of cream. Served with rice and broccoli. Was delicious and kids loved it

  114. Made this last night, well similar. I had one and a half chicken breasts, a tub of spreadable cream cheese and a pkt of taco mix. Cooked for 3.5hours on low. Smelt amazing and I can’t believe I’m gonna say this, the kids LOVED it. We just got wraps put chicken and some grated cheese on half and then folded it over. Put them in the frying pan to toast up a little and melt the cheese. Served with chips and salad. This will be on our menu again for sure ?

  115. It waz yum. (I used thighs)The leftovers were amazing too as I made them into individual pies. I put a spoonful of chicken mixture topped with grated cheese then put top layer of pastry and into pie maker. Yummy

  119. Omg this recipe is absolutely amazing and a favourite in our house I usually cook this and then put it in tortillas and turn into enchiladas absolutely amazing and we have served it with rice and veggies both are great

  120. This was delish! I served it with rice and steamed veges and my kids nailed it. I ate the left over with 4 bean mix and salad for lunch – so good!

    Note – I’m super lazy so I used chicken breast and did even do the adding cream thing – I literally just did the first step, mixed and shredded. I also accidentally left it for almost 5hrs cause we were out and it still worked out well ?

    Love recipes that aren’t super finicky or ruined if you don’t quite follow them!

  122. I needed to add more taco seasoning, 10g of garlic Tabasco sauce, 2 tsps of chilli powder and a lot of salt and pepper as the sauce and chicken had no flavour or not enough to get through the creaminess of the dish. Other than that it was really good.

    I have been wanting to try this recipe for a while. Im very particular with flavours and cooking and wasn’t sure if I would like this. Hubby, toddler and I absolutely LOVED it. Such an easy recipe to prepare. I used chicken thighs instead of Marylands. I think next time I would leave out the cornflour as I don’t think it needs it. I used my Sunbeam Secret Chef 5.5L SC and did 4 hours cooking on Low.

    Hubby picked this out a list of meals I wanted to try but I personally wasn’t sure of it. I added macaroni, peas, corn and a bit of extra cooking cream and it was divine.
    Will definitely make again because yum!!

    This is a favourite it our house. My two teenage kids practically start drooling when I say we are having Mexican chicken for dinner. I do add a little extra spice with a big Cajun and a chill to give it a boost. Thank you to whoever created this. It’s really gone down a treat with my family.

    So easy, and quick to prepare, and I love that you could serve this with anything and I feel like it would work! I also like that it’s a “quicker” slow cooker recipe, so I can get it in around lunch time rather than scurrying about doing it first thing. I added some baby spinach to the pot about 15 minutes before serving, and it was delicious! This will def get eaten again at my house. So good.
