Creamy Chicken, Bacon & Veggies

Ingredients
 

  • 1 onion diced
  • 1/4 red capsicum diced
  • 2-3 garlic cloves crushed
  • 1 long red chilli de-seeded and finely diced
  • 15-20 fresh basil leaves roughly chopped
  • 200gm shortcut bacon diced
  • 3 skinless chicken thigh fillets cut in 2cm pieces
  • 1 tin of cream of mushroom condensed soup (no water added)
  • 2 tbs whole grain mustard
  • 1/2 cup plain flour
  • 300gm mushrooms sliced
  • 2 small carrots sliced
  • 2 small zucchini sliced
  • 2 bunches asparagus sliced
  • Salt and pepper

  • 160gm bag of fresh spinach
  • 190gm tin corn kernels drained
  • 1 cup frozen peas
  • 300ml sour cream

Instructions
 

  • Add all the above ingredients (except for the last 4) into the slow cooker bowl and mix well.
  • Cover and cook on LOW for 3.5-4 hours until chicken and veggies are cooked.
  • Add the last 4 ingredients in and mix well.
  • Cook for a further 20 mins to heat last ingredients through.

Notes

  • Can be served on it's own, with pasta, over rice, with crusty bread or perhaps a pie filling.
  • More or less sour cream can be added, depending on what sauce consistency you like.
  • Can add more chicken to bulk out.
  • Alternate veggies can be used, as much or as little as you like.
  • Used a 6L slow cooker.

  1. Made this tonight, had it on its own & it’s amazing! Vegies and meat all in one easy meal. Left out the asparagus though. Tick of approval from my fiancé, will definitely be adding to my list of favourite slow cooker meals ?

  2. This was an absolute hit in my house tonight. My partner and I loved it!! I left the asparagus out and added an extra chilli served with mash potato. Will be adding this to the regular dinner rotation.

  3. This lived up to expectations. I left out the asparagus and zucchini and substituted for a head of broccoli. I used minced garlic instead of cloves, and only had english mustard so used that. I used a kilo of bone in thighs, cooked on high for 4 hours and it shredded off the bone easily at the end. I mixed in cooked fettucine at the end and it was delish. The chilli and mushroom flavours meant it wasn’t bland like other slow cooker meals can often be.

  4. Awesome recipe
    I used it as a guide though
    No capsicum or chilli due to allergies
    I’d run out of garlic and had no fresh basil
    Veges I used onion, carrot and parsnip and added at the end peas and corn
    Herbs was thyme
    Soup was cream of chicken

    But it was delicious ?

  5. This is a regular in my house. I just use what ever veggies I have at the time and it successfully works with a whole bag of penne pasta. I also add the spinach when serving as I prefer it fresh over soggy
