Half juice of freshly squeezed lime
Pinch of salt
Handful of fresh parsley
1 teaspoon of Greek yoghurt
2 chicken breasts
1/4 cup water
1/4 cup thickened cream ( would probably add more to make it creamier next time about 1 cup)
1In a blender add all ingredients except the chicken. Blend until a nice thick consistency. Taste test. U can always add more or less according to your taste.
2Season chicken with salt / pepper
3Place chicken in slow cooker and smother the avocado mixture on top and the cream. (Reserving some of the mixture for the rice).
4Cook on high for 2 hours.
5Add some of the avocado sauce through your rice.

Very yummy dish.. will deffinately be making it again :-).The recipe puts the fillets in whole but i cut into chunks instead as its easier to serve. It also suggests adding 1 cup of cream rather than 1/4 cup to make it creamier. I doubled the recipe and used 2 small cartons of cream not entirely 1 cup each and there is loads of left over sauce so i would use only 1 carton next time (so 1/2 cup of cream rather than 1/4 cup)
