Chunky Beef Curry
A simple heart warming beef curry.
Ingredients
- 1 Onion (Chopped)
- 2 Cloves Garlic (Crushed)
- 1 TBL Ginger (Grated)
- 2 TBL Curry Powder
- 650g Beef (Cubed)
- Salt & Pepper
- 420g Chopped Tomatoes
- 1 TBL Beef Stock Powder
- 250ml Coconut Milk
- 5 Potatoes (Diced)
- 2 Carrots (Chopped)
- 1/2 Zucchini (Chopped)
- 1/2 Sweet Potato (Chopped)
- 1/4 Butternut Pumpkin (Chopped)
- 1/4 Cauliflower (Florets)
- 2 Sticks Celery (Chopped)
- 1 Cup frozen Peas
Instructions
- Throw all ingredients (EXCEPT: pumpkin, zucchini, celery, peas and cauliflower) in the slow cooker and mix well.
- Cook on low for 3 hours.
- After 3 hours add remaining vegies and continue to cook for the final 1 hour.
- Serve and enjoy. 🙂
Notes
- My slow cooker cooks at a higher heat than most others. Times may vary.
- If running dry add a cup of warm water

This was very flavoursome! I doubled the recipe but only put in 3tbls of curry powder. Still gave it a good spicy bite! I also coated the meat in flour before adding so it was a nice thick sauce & cooked for 8hrs on low. Shall certainly make it again

After reading the reviews, I had to give this recipe a go.
With just enough curry to have a slight kick, and without it being over the top, this suited our tastes perfectly.
Topped off with a slice of fresh bread to mop up the sauce

Lovely easy recipe full of veges! Really enjoyed it and will make it again but will only use half the curry powder as it was a bit hot for us but still very nice. Thank you!
