450 - 750g mince (depending how meaty you want it)
3 carrots chopped
2 onions chopped
2 cloves garlic
2 x tinned tomatoes
2 x small tins of tomato purée
2 x chicken stock cubes
2 x bay leaves
1 green pepper chopped
1 x red pepper chopped
1/2 to 1 Cup of water (enough to loosen the mixture but not make it too saucy)
Tin of kidney beans (drained and rinsed)
1/2 cup of red wine
Pepper (I don't add salt but you can)
Mild or hot chilli powder to taste - I use about 4-5tsps of mild to give good flavour but not spicy.
1 tsp smoked paprika
1 large sweet potato
1Saute off onions, carrots and garlic in pan then add I sc
2Brown mince and add to sc
4Add remainder of ingredients to sc (except the sweet potato unless pushed for time and you could add now)
6Cook on high for an hour
8Meanwhile roast off some sweet potato in a little olive oil in oven at 200C (- it gives an amazing caramelized taste to the chili)
9Once roasted add to chili
11Switch to low for as long as you have (I usually do about 6 hours) and it's delicious x
