Cheesy Spaghetti and Meatballs

Ingredients
 

Meatballs

  • 500g mince
  • 4 sausages skinned
  • 1/4 cup grated cheese
  • 1 cup diced bacon
  • 1/2 cup breadcrumbs

Sauce

  • 1 small onion diced
  • 1 tsp parsley
  • 1 tsp mint
  • 1 tsp basil
  • 1 tsp oregano
  • 1 bay leaf
  • 1 tsp garlic
  • 400g can diced tinned tomatoes
  • 1 Tbsp sugar
  • 3 anchovies
  • 80g tomato paste
  • 1 cup water
  • Extra grated cheese to garnish

Instructions
 

  • Combine all meatball ingredients together throughly and roll into balls about the size of your cupped hand and set aside
  • Place all sauce ingredients into slow cooker and add in meatballs.
  • Cook on high for 2 hours and low for 2-3.
  • Skim off any excess fat with a spoon

Notes

  • Could add in some hidden vegetables to fool those fussy eaters. Just dice finely and substitute for the breadcrumbs. Just need the mixture to be a little sticky at the end

  1. This was crazy delicious. I didn’t have all the individual spices, so I used about a tbsp of italian herbs instead. Next time I’ll make double the sauce, so there is plenty for saucy spaghetti. It makes 4 generous servings. Thank you for sharing!

    So yumm! Definitely needs the sauce to be doubled though and I will make the meat balls smaller next time 🙂
