Cheesy Chicken and Broccoli

A beautiful slow cooked chicken and broccoli recipe for the whole family

Ingredients
 

  • Chicken breast, diced (however much you require for how many you're serving, I used 700g)
  • Broccoli, chopped (we like a lot lol) so we use 1 and a bit heads of broccoli .
  • 1 cup of mayonnaise (this can be adjusted with your amount of chicken used)
  • 1 heaped tablespoon of seeded mustard
  • 4 tblsp of garlic (we also like a lot of this so adjust to your taste if necessary)
  • 1 x 400g can of cream of asparagus soup
  • 2 tbslp curry powder
  • Good Squirt of lemon juice
  • Approximately 2 cups of low fat grated cheese ( I use low fat to stop it coming out oily, but you can use normal if you prefer)

Instructions
 

  • Sear chicken.
  • Add chicken to slow cooker than all other ingredients
  • Cook on low for 4 hours stirring occasionally

Notes

  • Searing chicken is personal preference, it can be added in raw if you prefer.
  • I use the Kmart multicooker which cooks hot so cooking times may need to be adjusted to each slow cooker.
  • Serve with rice

    This recipe, omg! Huge hit in my house even my 2 year old loved it and went back for seconds! By far my favorite recipe so far in my slow cooking journey! YUM YUM YUM ?

  2. My husband and 2 year old daughter did not like it. I think it was the mustard and asparagus flavour maybe. I personally thought it was ok but I wouldn’t make this particular recipe again. Maybe next time I will try the cheesy brocolli casserole recipe that doesn’t use mustard and has less mayonnaise and curry powder and uses cream of chicken soup.

    I loved this! I used cream of celery as that’s all I had in the cupboard at the time and found it delicious still!! Big hit in the house!

    Done this and the whole family loved it. I swapped out the asparagus soup for cream of mushroom as that is all i had and it worked great. Served it up with penne pasta and will be doing this again. I also added a quarter of a cup of chicken stock and thicken it up with cornflour towards the end, as i wanted more sauce, it was yummo.

    Done this the other night, was a big hit with the family. Swapped out the asparagus soup and used cream of mushroom instead as thats all i had. I also added half a cup of chicken stock to make it more saucy which i thicken up at the end with a little cornflour. Served it with penne pasta, definitely doing this again.

  6. I made this yesterday. Changed the soup to cream of mushroom because I wanted to use up a punnet of mushrooms and thought that would compliment it. Also added cauliflower with the broccoli.
    It was a tasty dish, and my almost-adult son reckons it needs to be a regular on the menu!
    p.s. he’s already called dibs on the leftovers for his lunch today 😉

  7. I cooked this tonight using 1/2 cup of mayo and cream of chicken soup. It was so yummy and i forgot the cheese, i dont think it needed it

    Made this as I had all ingredients expecting fussy Miss 7 to turn up her nose as usual, but to my astonishment she ate it all and had seconds! I only had condensed chicken soup and will use the same next time! A hit with all family members, woohoo.

    Delicious!
    I substituted quite a bit as I didn’t have a few things: asparagus for chicken soup, chicken breast for a cooked chook from the supermarket and seeded mustard for American. Added Penne Pasta at the end.
    Family loved it,
    Will definitely be doing again

    Yummy!!!

    We reduced the curry by half & the cheese by half but left everything else as is and it was sooooo good!!

    We served ours on a creamy potato mash & it was enjoyed by the whole family 🙂
