Camembert & Basil Breast Pockets

Succulent slow cooked chicken breasts, stuffed with a creamy Camembert and basil filling and served in a fresh tomato base.

Ingredients
 

  • 5 chicken breast fillets
  • 10 large fresh basil leaves
  • Camembert - approximately 50g
  • 1 x 400g can of crushed tomatoes
  • + toothpicks

Instructions
 

  • Lay fillets on a cutting board and carefully cut a pocket opening in the top of each one
  • Stuff this pocket with 2 basil leaves and a piece of Camembert cheese
  • Secure pocket closed with toothpicks
  • Pour tomatoes into base of slow cooker and gently lay each breast in the tomato base
  • Cook on HIGH for 2.5hrs or until cooked through in your slow cooker
  • Remove toothpicks from each breast before serving and top with the tomato puree
  • Enjoy beautiful, succulent slow cooked chicken breasts, stuffed with the creamy Camembert and basil filling in the fresh tomato base served with rice or vegetables or even salad
