Broccoli and Leek Soup

A nice, thick and flavorsome soup, great with crusty bread.

Ingredients
 

  • 3 broccoli, cut into florets
  • 2 leeks, roughly chopped
  • 4 small potatoes, roughly chopped
  • 1 carrot (optional)
  • 2 chilli's (optional) sliced once, lengthways
  • 2 litres chicken stock
  • 300ml sour cream
  • teaspoon black peppercorns

Instructions
 

  • Chop all vegies and place in slow cooker with peppercorns
  • Add stock
  • Cook on low for 5 hours
  • Blitz and then add sour cream, blitz to mix

  1. I wanted to make this soup tonight. I am however unsure how much broccoli is needed. What does 3 broccoli mean? Approx what weight do I need please. It sounds so tasty.
