Breakfast Slice - Low Carb
A tasty low carb breakfast slice the whole family can enjoy!
Serving: 8
Ingredients
- 8 eggs
- 2 large slices of picnic bacon
- 1/4 red capsicum (pepper) fine diced
- 50ml thickened cream
- Salt and pepper
Instructions
- I cooked this in a silicone cake loaf tin, sitting directly on the base of my searing slow cooker. You could also use a regular cake tin or baking dish
- If your slow cooker has a ceramic bowl be sure to an an inch of water to bowl first rather than cook dry in a ceramic bowl. You can do this water step for all slow cooker types if you like - up to you 🙂
- Spray the tin with non stick cooking spray
- Whisk eggs and combine with cream, red capsicum and salt and pepper
- Cut one slice of bacon (or as much as you need) and cover base of tin with bacon
- Gently pour the egg mixture over the bacon
- Lower tin gently into slow cooker and cook on HIGH for 1hr with The Tea Towel Trick
- After 1hr add a second layer of bacon to the top of the dish (after the egg has set enough to hold this bacon up)
- Continue to cook for another 30mins on high or until egg is cooked through
- Slice and serve

- Nice with a dribble of sugar free sweet chili sauce on the side
