Breakfast Casserole

A fully loaded breakfast sure to satisfy!

Ingredients
 

  • Potato Gems
  • 6 cooked and chopped sausages or bacon
  • 1 sliced onion
  • 4 sliced tomatoes
  • 6 eggs
  • Grated cheese
  • Feta cheese
  • Worchetershire sauce
  • HP sauce
  • Salt and pepper

Instructions
 

  • Line the slow cooker with baking paper
  • On the bottom layer potato gems
  • Then a thin layer of cheese
  • Then sausages and onion
  • Then worchetershire sauce and hp sauce
  • Then tomatoes salt and pepper
  • Then the eggs
  • Top off with more grated cheese and crumbled feta cheese
  • Cook on high for 2 1/2 hrs with a tea towel under the lid - The Tea Towel Trick

    How many potato gems would this be?
    Is any of this precooked?
    And how do you put the eggs in? Just crack them? Or another way?

    Hi Amy,

    I did 1 layer of potato gems in a 6L slow cooker which was approx 500g (1/2 a pkt).
    I precook the sausages and bacon if i use them.
    I cracked the eggs straight into the dish.

    Hi Nan,

    In a 6L i used-

    500g of potato gems
    1 1/2 cups of grated cheese
    6 cooked sausages (or bacon rashers)
    1 onion sliced
    1/4 cup hp sauce
    1 1/2 tablespoons of Worcestershire sauce
    4 tomatoes, sliced
    6 eggs and
    200g of feta cheese
