Ingredients

500g beef mince

435g can refried beans

1/2 cup canned red kidney beans, drained & rinsed

400g can diced tomatoes

2 Tblsp tomato paste

1 tsp chilli powder

1 tsp ground cumin

1 tsp paprika

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp dried oregano

— To Serve —

Corn or Tortilla chips

Grated cheese

Sour Cream

Mashed Avocado

Directions

1Combine all the nachos ingredients in the slow cooker

2Cook on low for 5hrs

3To serve, arrange chips on serving plates, spoon over nachos meat and top with grated cheese (see notes)

4Add a dollop of sour cream and smashed avocado

5— Notes —

6We like to zap the nachos in the microwave for 30-60 seconds per plate to melt the cheese nicely before adding the rest of the toppings, but that’s optional 🙂

8You can replace the 6 spices with a 40g sachet of taco type seasoning if you prefer to make an easier version.
