Baked Baby Potatoes

Slow Cooked seasoned whole baby potatoes

Ingredients
 

  • 10 small whole baby washed potatoes
  • 1-2 tbsp olive oil
  • Himalayan pink rock salt
  • Cracked black pepper
  • 1 tsp fresh parsley
  • 2 tsp fresh chives chopped

Instructions
 

  • Place washed potatoes in slow cooker
  • Drizzle olive oil over potatoes
  • Season with salt & pepper
  • Cook on LOW for 3hrs (or on HIGH for 1hr 45mins)
  • Test potatoes with fork to ensure they are cooked to tender in your slow cooker
  • Remove from slow cooker and place in a bowl, add fresh herbs and re-season with S&P if desired and toss to coat.
  • Serve as an easy side dish to your next main

  1. I cook these every weekend so easy just love them. The only thing I do different is blitz up some onion with the parsley and put that in and maybe some mixed herbs – YUM

  2. I’m having a function with 30+ people, I have a large slow cooker, could I fill or 3/4 fill it with the potatoes all stacked on each other? Would it take a lot longer to cook? Thanks

  3. I made these last night in my baby slow cooker. I knew I wouldn’t have 3 hours, and really appreciated Paulene’s advice on the Facebook page to do them on high for around an hour and 45.
    They were absolutely delicious! They will be a regular from now on. I put the herbs in at the start as all I had was dried, and added some rosemary and some garlic powder. Yum!

  5. WOW.tried these tonight. Will definitely be doing them again. Did them in my 1.5 litre SC and only took 2 hours on high. Thankyou Paulene for sharing ?

  6. I’ve had mine on 3hrs in a 3.5L and the potatoes are rock hard still. So have put it up to high and will see what happens.

  7. I love these & make them often using garlic butter. Just need to watch my slow cooker as it cooks very hot.

  8. So darn easy and taste so good. I think that they taste better than when done in the oven. (Maybe because they are SO easy!)

  9. I used medium potatoes and they took 2 hours on low. Absolutely peefect.
    Added sliced to homemade burgers instead of a side of fries.

    Excellent! I couldn’t find any decent fresh herbs so I took others advice and put the dry ones in at the beginning of the cook. I used two kilos of baby potatoes so I used my 6.5L slow cooker. They cooked on low for 3 hours then high for an hour just to make sure they cooked in time. Will be doing my potatoes like this whenever I have a large gathering to feed from now on!

    Love this recipe! My go-to for a side for dinner, espcially on a hot day so we don’t have to run the oven. I always add in extra potatos so that in the coming days I can season them differently and turn them into wedges in the air fryer. Very versatile!

    8 small potatoes in Baby cooker, (I didn’t add herbs don’t know why), cooked for 2 hrs on high, turned a few times so they cooked evenly, they look delicious, going to have a quick snack can’t resist.
