Apple Cinnamon Cake – Canola, Dairy, Gluten, Lactose, Soy free

Ingredients
 

  • 3 cups plain gf flour
  • 2 cups brown or coconut sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • ¼ teaspoon baking soda
  • 2 tablespoons apple juice (Kalangadoo Organic)
  • 2 cups stewed apples
  • Cinnamon to taste, I generally already have some in my apples

VARIATION

  • 1 or 2 apples, cored and sliced in rings
  • Approx 1/4 cup brown or coconut sugar

Instructions
 

  • Combine all dry ingredients and mix. Add stewed apples and apple juice, mix until no dry patches.
  • Line cooker bowl with baking paper and pour mixture in.
  • Cover with tea towel under lid.

VARIATION

  • Line cooker bowl with baking paper.
  • Lay apple slices in bottom of bowl until covered, sprinkle with sugar. Pour mixture on top.
  • Cover with tea towel under lid.

Cooking Time: approx 3 hrs on high (3.5L Crockpot slow cooker)
