Packed full of simple, sweet in season vegetables this soup is dairy free, gluten free, low FODMAP and vegan

Ingredients

800g Butternut pumpkin

650g Carrots

400g Parsnip

400g Swede

650g Sweet Potato

1L Vegetable stock

Directions

1Chop all vegetables and place in slow cooker bowl with stock

2Cook for 8-9hrs (Contempo 5.5L sc) on LOW

3Blitz in food processor or with a stick mixer

4Season to taste with salt and pepper
