Hi Jamie, yes this is cooked on low with the lid off, I've always done fudge on low, but again trial and error, everyone's slow cooker is different, the sc i use for my fudge is only a 1.5l if I was using my 6ltr I would try on high as it takes forever to heat up. As for doubling the baileys with the rest of the ingredients, i would stick with the 1/2 cup and then add a little at a time until it is thick consistency but not runny. Let me know how you go ?
