I made a 2kg version of the Bacon Wrapped Chicken Loaf tonight to feed my family of 6. It needed just over 4 hours on High to cook through (7l Breville ) and then I transferred it in the oven for 15 mins to crisp the bacon. It was very tasty, happy to recommend it.
Adjustments to recipe:
2kg chicken mince
1 cup breadcrumbs
3 beaten eggs and a splash of milk
2 tbsp Italian herb mix
1 tbsp garlic powder
3 chicken stock cubes crumbled
1 tsp salt

I just pour a bottle of ranch dressing over the chicken for some subtle flavour

I used a focaccia bread mix which was a bit bland, I'd recommend adding garlic and herbs. Be aware that to ensure the middle is cooked, the outside can become over crusted.

Quick, tasty and inexpensive meal. I served with new potatoes and salad
