I was not disappointed with this recipe. I double and a halved the recipe and the entire family (3 adults) loved it. Would definitely do it again.
I made this for my dad. He thoroughly enjoyed it. I doubled the recipe so he could have some frozen meals of it as well. I did not double the cornflour. Next time I'm going to use half smooth peanut butter and half crunchy just to see what that's like. I'll also add extra peanut butter. 😉
I absolutely love this. I slice it up and freeze it. Every morning take a small slice out of the freezer for morning tea (reheat in the microwave). I also add chopped baby spinach and occasionally (if I'm feeling naughty) tomato and extra cheese. 10/10.
Note: I do not use the tea towel method.
Hi Glen. You could cut them up if you like. It would work both ways. I left them whole as I was just being lazy. 🙂
Made this tonight for dinner. Also added some sultanas and mixed through some cooked rice at the end. We thoroughly enjoyed it. I found it hot (a bearable kind of hot) but I am a wimp when it comes to heat. Will definitely be making it again. 🙂

Tried this recently but added 50ml of rum, chopped pecans, mixed spices and a handful of chocolate drops.
My goodness it was the most beautiful fruit cake I had ever tasted! So moist, my portion sizes became bigger and bigger. lol
An absolute winner.
Soaking the fruit is the secret to this recipe. 😉
